A Cafeteria or cafetière, cafetière à piston also know as press pot, coffee press, or coffee plunger is a type of coffee brewer in which coffee grounds are steeped directly in a pot with hot water before being filtered. Developed in Italy in the 1930s, the Cafeteria became popular in post-World War II France, and in recent years has grown in popularity in the United States. The press generally consists of a metal or glass pot and a lid through which a plunger with a mesh filter screen fits. Coffee is brewed in a French press by mixing the grounds and hot water directly in the pot with the lid on and the plunger in the uppermost position. After the coffee has reached proper extraction time, the plunger is pressed down slowly to move the filter toward the bottom of the pot. Coffee is poured directly from the press pot into a cup. The mesh screen filters out the majority of coffee grounds.
